    I usualy steak it, did it in soy sause and lightly fry on the BBQ... or without any sauce and just fry in butter.
    Fishing ... Hunting its all good

    Yep steak em. Scale them then just cut em like cutting rings off a log. bone in skin on.
    Then you could put your secret hearbs an spices in some flour mix it up and cover them with it and pan fry in butter,or grill or my fav bit of garlic butter touch of paprika squeese of lemon wrap in tin foil bake 15-20(depending on size/thickness) in preheated oven @ 180c

    like VC said light flouring brush with butter and bake @ 220c for less than 10 mins you will never eat fried fish again
    or even better still teach the wife

    Smoke them. Don't forget to smoke the head also. The cheek meat comes out sensational

    I coat it with Seafood coating ,bit bland really otherwise.
