Thread: Fried chicken

    Fried chicken

    I was asked to do this by a good friend, i will admit fried chicken is not something i have done a lot of so i spent almost 2 weeks experimenting with this to get it just right.
    It's extremely good and i hope you enjoy it as much as i did

    Ingredients 1 whole chicken cut up into its parts (if you don't know how there are plenty of videos on youtube showing you how to do this)

    Milk
    1/2 cup sour cream
    6 cloves of garlic, minced
    Salt
    1 tsp of sugar

    For the seasoned flour

    3 tablespoons of cumin
    1 & 1/2 tbsp mixed herbs
    2 tbsps black pepper
    1 tsp cayenne
    2 tsp salt
    3 tsp chicken stock powder
    Flour

    Oil for frying

    mix together the sour cream, milk, salt, sugar and garlic until they dissolve into the milk. Pour in a container and add the chicken pieces add more milk to completely submerge the chicken. The milk enhances the flavour and texture, this is basically a brine.
    Refrigerate for 24 hours.

    Mix the seasoned flour ingredients together and toss the drained chicken pieces in it until very well coated. Set aside for at least five minutes to allow the flour to adhere, after this time toss again if necessary.

    Heat the oil to 180 degrees in whatever pot or pan you are using ( i used a cast iron pan) and place the chicken in skin side down, start checking at 7 minutes and flip when the skin side is golden brown.
    Place on a rack to cool and drain.
    If the pieces don't cook all the way through due to large pieces you can finish them in a 150 degree oven.

    Mmm that sounds good, Im keen to try it with turkey breasts with a little cheese sauce stuffed inside it

    and wrapped in bacon.
