    Sweet thanks for the responses, I've taken it to a butcher in onkawa who does a good salami but sausages were very average. I'll give wild game a go.

    Hey I'm just wondering what butcher/ company you take your venison to, to get turned into salamis and sausages in Hawkes bay. It would be greatly appreciated.
