I have taken a few deer apart over the years but last year I was with an old Mate who has done many years as a guide for US big game hunters - I shot a spiker and started the process to gut the animal when Neil said to me - hey wait a minute - tie off the esophagus (at the front end) - he ripped it clear of the neck and tied it in a knot - the esophagus is the feed pipe to the rumen which is full of all that green stuff - no gut contents are going to spew out of that when you pull the guts out of the animal - so simple and it took me 50 years to learn it!
