So I'm heading out on my first proper hunting trip in a few days. Primarily seeking the chance to fill my freezer with venison. The block I'm heading to also has Tahr and Chamois, and should the opportunity arise I would be keen to take either one. Watching a bit if NZ hunting adventures, and it seems like they just take the back strap. Is that common practice? Is the rest of the meat not so good for eating? How much do you normally harvest?
As much as is not damaged, at least back straps and back legs minimum.
Take as much as you can carry! That said if you drill something in the shoulders back straps & hind legs are about it , Tahr is very good eating especially from a younger animal.

Yea I think you’ll find a lot of criticism if someone finds out you only take the back straps when you go for a hunt..
Personally, I just hoist it up in the nearest tree and bone the whole lot up, have always done so and will continue, you will be very surprised at the amount of meat you can get off and animal! Just bone the whole thing and get it all turned into sausages, mince, patties and steaks. If you are in Canterbury go to Bromley Homekill Meats just out of Rolleston towards west Melton.

Younger tahr is considerably - noticeably, at least to me - more toothsome IMO. But I try never to leave any meat behind, there's always something that people with carnivorous animals can use even tho' I cannot.
The wife finds tahr a little rich for her digestive system but I quite like it, however we all eat Chamois so I recommend you take all the meat and see how you go. If you find its not exactly to your palate then you can always make it into sausages mixed with something else. No point wasting it... especially after going to so much effort to recover it.
