    Another beauty knife...FS

Bark River. The famous Fox River model.
    4” blade. 3V steel.
    Maroon linen micarta handle.
Blade profiled by Virtuovice in Japan. Its amazingly sharp.
Used a bit but in perfect condition.

About as good as they get.

    $250 inc postage.

Depends what you are doing. If you bone them right down before they go into your pack like I do, probably 2. If you are just gutting, doing the back steaks and hacking off the hind quarters and forequarters, maybe 4 or 5. Probably more, but I can’t stand a dull knife. I’ve skinned and boned out a big bull Tahr with 3V without touching the blade, no trouble.
3V steel is one of the supersteels, and has probably 3-4 times the wear resistance of the likes of Buck.

I believe you need to factor in how you go about using it just abut as much as steel quality.

A hand made knife made out of good steel counts for bugger all if you use it like a saw against bone trying to take off the hocks for instance.

Bone against blade edge is extremly good at chewing up and folding over that razor sharp smooth edge you spent so long polishing up the night before.

There are 2 factors to consider; the wear resistance and the toughness of the steel. 3V has good wear resistance and very good toughness. So it can take a bit of a beating. It also has very small carbides because of the compressed nature of its production, so it doesn’t chip like say D2.

But as you say, all good knives should be treated with a bit of respect. Why would you want to wreck a a piece of craftmanship.
