My vote 7mm08 because ive got one , but i dont think you can go too far wrong either way.
I load my 16”ish 308 with 125gr accubond. Only doing 2650fps. My daughter just shot a boar at 255yds, head shot it. Complete penetration. I’d be happy using that combo out to 300yds.
Load is Winchester brass, federal 210 primer 46.5grH335.
that girl can shoot bud........255 yards and I would be centre of shoulder.
The pig was walking across a slip and the scope was on 3.5x. Good or fluke got the pork on the deck. My wife is always asking for me to shoot a pig. My daughter missed a pig at 70yds about a year ago, so she was stoked to get this one. We cooked the filet on a stone over an open fire, it was delicious.

Tried the 125AB's and wasn't to impressed (going 3k tho). I know plenty of folks rate them. 150BTs for me in the 308.
Re the short 308 I have been looking into it recently and shooting the speer 165 btsp (0.52bc) @ 2600fps, which isn't that outrageous out of a short bbl with the right powder, gives you just under 1800fps and just under 1100ft lbs at 600yds so really opens up your options if it shoots
Well I'm not a fan of the 308 but if your are looking at short barrel rifles and heavy / larger bodied game at ranges out to say 300 mtrs then a larger hole will be more efficient accelerating a heavy lump of lead in a short barrel.
ie I shoot a 24" barrel 243 and a 20" barrel 358.
The 358 has about done it's chips by 300 mtrs ie 1450 ftlb energy but velocity is under 1800 fps so bullet performance reduces.

I use these to good effect in an 18inch barrel with cfe223. I only shoot them at 100m so nothing validated. Someone who ought to know said the ,520bc was a bit ambitous and he figured them for ,477
My 2 cents worth as I went down this track couple years ago , ended up with 308 with 20 inch barrel and DPT , I have a small 10 power nightforce scope for reliable dial up , obviously the 308 has its limitations for longer range type shooting but i set a personal limit of 400 so it’s fine , really no difference in Calibres in that set up just personal choice , what ever you choose and after you nailed your first couple animals and gain confidence with it you will be happy with either I’m sure .
708 softer flatter shooting with a bit more projectile choice. 140gr Berger vld good up close and out to 500m. Chopped to 18inch
