My hex key sets have dwindled over the years and now gone missing entirely.
Can people recommend brands that won't burr or be not quite right and damage scrw heads ?
I see in Mitre 10 there is a Fuller umpteen piece metric+imperial set for about $30. Are there others that will be better or worse than that ?

I have a pair of SnapOn sets that are on year 20 of use. One key (6mm, the shorter one) has been carefully ground back a couple of mm, but that's it. Were they worth the money? Yes, probably, for what I do. Would 6 sets of Fuller or TopTul or the like have been better for me? Also yes.

I just use replaceable bits in a screw driver.
Never had an issue with them being the wrong size, and typically easier to use.

You have already described the biggest fault with most hand tools. They get lost. I find it's cheaper to lose a fuller rather than a snap on hand tool. As long as they are not super cheap Chinese junk most are fine.
Also agree that socket fittings or t bars are a lot easier to use than normal Allen keys. Socket fittings can then also be fitted into torque screw drivers
I have an imperial set of unbreako brand english made ones they live up to their name.

Wera keys. Stupid strong and great design. Love mine. Even hanging off the 10mm with a 1m cheater bar, no bending or bolt damage. Cheapish too.

Depends on how often you’re going to use them, tradies buy quality tools that cost more than average because they can be using them on a daily basis and need them to last, if your only going to use them occasionally then buying a set of snap on would be over kill, bondhus or toptul is a good middle of the range brand. Personally I’ve got a set of toptul that done everything I’ve asked of them.
Bondhus, I managed to get the 8mm one to twist a complete flat (very tight cap screw and long piece of water pipe), the impressive bit was that it didnt round off the allen key or destroy the cap head, and it did get it undone with a bang when it went. The same bolt previously snapped a powerbuilt inhex socket
