Here's how we do it; the trick is to start the right hand back steak from the front.

I’m interested in where you cut through the back steak at the back? I cut through a sheep in the dip of the back just forward of the hip, is that the same on a deer.

Yep, you’ll see me put my finger on the hip bone and then I cut on an angle to get the maximum amount of meat off with the back steak.Quote:
