I like Mr.Hattori's work. He's 74 and still making knives.
If you want a 'really' sharp, well made knife then you should have a wee look.
It only took me 90 seconds from opening my first parcel to having blood all over the floor!
Damn, they're sharp.
The words 'Razor Sharp' don't really tell the story about these knives.

I have Kershaw, and Frontier knives.
The Japanese knives leave them for dead in terms of quality and sharpness.

I have tried another hand made knife (NZ made) and not impressed. Wouldn't hold an edge. Went blunt just gutting a pig. Happy to give it away to any member.
I guess it's why some guys shoot a Sako and others prefer a Marlin, or an SMLE (if you see what I mean).
Just because it's the right knife for me, doesn't mean it's right for others.

I have a bit of a OCD thing on things that cut being sharp(hangover from my other trade)
I love HARD steel blades, most commercial knives are pretty soft.

I had a quick look on Trade Me for Damascus blades.
There are a few cheapy's there, but as for the rest then the Japanese blades compare very well for price.
Plus, I don't know that I would happy with a Trade Me, Chinese made, so-called Damascus blade.

I've dribbled all over my iPad! That is a nice lot of knives, best is the ones I'd like are sold out!

VG10 is a good steel, but there are plenty better in terms of edge holding and toughness. The Japanese steel Super Blue ranks right up with the best.

VG10 is plenty good enough for what we use a knife for though, and better than what most of our knives are made of in NZ. The trouble is though, the further you move up the durability/hardness scale the harder the steels are to sharpen.

I've had a few damascus knives over the years. They look nice, but are mostly blended from reasonable soft simple steels. I've never struck one that can out perform a non blended blade.

The best steel I've got in a knife is 3V, but it can be difficult to sharpen. Once sharp though, its good for several animals.

man that cocobolo drop point is my dream these knives look hearty.

They are very sexy , found myself in love with a $800 beauty . If I brought one I'd get a free vasectomy ( when my wife found out) . Hope they are sharp :O_O:

The folded steel is called damascus. Its made up of layers of hard and soft steels welded together through heat. This means the steel can be flexed without breaking, and it is meant to take a sharper edge. In reality, the modern straight super steels are superior to damascus, but damned damascus looks good.

That knife of mine in the pic is made from 3V steel, which is a straight so called "super steel".

Damascus steel is not necessarly made of hard and soft steels.
In fact it is more often one grade steel folded many times to remove impuritys and more importantly to align its grain structure, giving strength beyond normal for its hardness.

Its a pretty decent steel.

Sandvik 12C27 knife steel

I can testify to the edge retention of the small folding Eka knifes.
As far as factory knives go (and Im a long way off testing all of em ) they seam very good so far
