I have to confess im loving my cheap dirty svord boning knife, more the shape of the blade, gutting , skinning , killing

Does anyone make a similar blade shape with any of those flash steels that you mention

if all these wonder steels are so fantastic why aren't commercial butchers using them ( apart from extra knife cost due to more expensive steel, heat treatment techniques etc) as all tradesmen know good tools are worth the price tag

I never said it was a fair test. I said it was my experience. Over a range of conditions and circumstances.

Its like sex. One day you will get to know what works best, why you should keep away from red heads, and what gives you the greater pleasure. I expect at the moment though, you are still just feeling your way.

Bark river are available locally if you want to pay close to $200 more than getting in from the states. NZ retailers love to rip us off

Bark river Gunny Hunter here in NZ = $439

Bark river Gunny Hunter from the states = NZ dollars around $250 plus shipping, your probably looking at around $17-20 postage via NZ Post youshop.

i have recently purchased some elmax i will get 3 knives per bar which means just the steel alone will be $40 per knife .
plus liquid nitrogen at $30 a liter for heat treat means knives made from it are going to be $400 +
makes it hard to compete with knives from overseas

Yours would be a real one off treasure though John, and would be built to the clients exact requirements. That's got to be worth a premium.

Fox River has a short handle. If you have larger hands it may be worth considering. There is a Fox River 2 IIRC. Unsure of handle dimensions but the blade is bigger.
My favorite is the Gunny, both Hunter and standard configuration

The knife I had last week was a Fox River in 3V @BRADS (nearly got to use it too). I also have a Gunny Hunter in 3V and a Gunny in S35VN if you want to try one.
I like the S35VN a lot for ease of care. 3V needs patience. @Tahr has knife ADD

One off handmade knives from such as yourself are worth the higher value. its retailers who import items and put insane mark ups that I have an issue with.
