Gut, skin,head and tail them, put them in an oven bag and cookem like a chicken in the oven, fillet them and sprinkle chineese five spice on them and any herbs and spices and fry them in a little butter and oil, yummo:)

Thanks guys, Tried a few different things with it now. I cant say I like the flesh as much as say..Snapper or even a Kahawai but its good to have on the BBQ over summer with a few mates and a beer all the same :cool:
Fillet from the top down each side and gut from the back - then can stuff the whole thing and wrap in tin foil, like a roast chook. Can recommend battered and cold the next day on the boat - once cold the meat goes like chicken.
