The hide?, not much really.
The hair is used but only in a few specific patterns. The finer hair (don't know where from) can be used in dry fly caddis patterns like an
Elk Hair caddis

or one of my favorites the Humpy

or spun in patters like a muddler

As the hair is hollow is water logs easily but if not cut will float well.

I look for a mixture of different coloured hair for different patterns.
The finer the hair the better IMO, that said if your going for a rough or coarse look then thicker coarser hair will work well.
Belly hair and rump hair tends to be lighter in colour.
Hair from the shoulder, neck and or spine tends to be darker.
Tail hair is good too.
I also have hair from different species with Fallow and Sika being my first choice, with Red and Sambar also good depending on the pattern you like.
I use coarse hair for this Koura pattern I developed back in the late 70's and also for Mice.

Bloody hell P38 they are cool. What weight would they be?
Man they are awesome Pete! How long to make one and are they ruined as soon as Mr fish chomps on it?
The Koura are tied on hooks size 6 up to size 2
This one is a size 4.
I put plenty of copper into them so they sink and retrieve then with a short twitchy action letting them sink again between twitches.
They work well .... especially in areas where trout feed on Koura.
The browns especially like the mice too.
Caught a couple on this one in the otamaire stream

@P38. Yeah, completely forgot about the ol mouse. There is supposedly a very good Beech mast this year and the mouse will make a very interesting pattern especially in the upper waters.
hook size means zip to me P38, would they cast alright on a spinning rod or be to light?
