    Eating trout

    I've spent my entire adult life catching and eating trout.. until recently. I've been in the Northland a few years now and got well in to the saltwater stuff. It goes without saying that snapper are fine eating fish. Thing is, I can't stand trout anymore! I've tried everything, all my old recipes, smoking etc, but it just turns my stomach. Anyone else been through this or can suggest a fail-safe recipe?

    I only eat sea run trout now.
    We have pristine waterways on the coast but river trout have always tasted like mud to me.
    Eel, perch and Kura are the only things I like out of fresh water.

    We Panko crumb all our fish - trout included , flour ,egg , Panko crumbs - fry them in a bit of oil and some butter to brown off the crumbs.
    In my experience river trout outside of Taupo or the Rotorua lakes seem to be the mud fish most people associate trout with, but if you get a Kura cruncher from lake Taupo or Rotoiti, etc they are just like salmon.

    Best thing for river trout is either use them for snapper bait or fillet them and smoke em... Then after smoking flake the trout into some cream cheese with a squeeze of lemon mix it up hard until it's smooth and you've got a nice pate' , spread it on crackers or on vogels toast. Try and cure the fillets for a day and make sure the fillets are dry before you smoke them to get the best smoking results.

    True. There are better eating fish out there, but snapper are a good sporting fish, as well as a good feed. Couldn't say the same for the rest, apart from bluenose which I have yet to tangle with.

    Blue nose is probably the king in my book.

    I'm in the same boat. Ate a lot of trout and now I really have no appetite for them. Great sportfish and better exercise to catch but I think you're pushing it uphill if you think you will like the stuff again. Your tastebuds are now spoilt. Only trout I will eat is bottled and @Roy Lehndorf has a good recipe for pate.

    Still kickin fresh trout, filleted cut into cubes, salt and peppered, cooked with real butter in the fry pan, I can still stomach!

    I keep drinking the same stuff hoping I won't get a hangover so I am fcuked😆

    Gurnard is the best far better than snapper imo.
    Wild river trout primo as but like a lot of fish or game meat got a add the flavour, smoked I like it moist so brine it well. Or bake it with onion herbs feta on top awesome as

    Tried a cold smoked trout on the weekend for the first time. Thought it was bloody good. Could be another option for you? Then again I haven't eaten much in the way of sea fish

    i dont like pale meat weed feeding trout, fish over sandy beds and rocky areas where they eat baby fresh water crays and theyre delicious smoked cold or hot do know a few who dont eat em tho

    Absolutely love Trout, if I've caught it out of Tarawra. I eat a lot of fish, Snapper, Terakihi, Kahawai, Sweep and g
    Gurnard, all in the last 10days or so. Trout is rright up there with all of them. Favourite recipe is. Cooked in lemon juice and prepared in coconut cream, Capsicum, cucumber, spring onions, baby tomatoes and coriander.
