    Salami

    I got a freezer full of venison and the Mrs wants some salami sticks. How much venny for a salami stick?

    Will the venny mince do?

    YeP. They will add a bit of fat most probably so will get back a touch more than you give but it drys and shrinks too.

    Locally most game butchers only do game meats once a week(massive clean out before and after) and can't really be bothered with less than 10 kilo of meat to process into salami or sausages.

    Dundee you are correct that it is sacrilege to put good venison into salami although I know of a fellah that put a whole 2 year old red into salami a few years back. What I do is keep all of the off cuts like the belly and from boning out between the ribs etc (all the crappy little bits) and store it up in a freezer until I have 2 or 3 plastic shopping bags full and then get it done.

    Never had cured venison sausage of any sort, how does it compare to the more typical pork and beef?

    Its nice Angus, has to be done right of coarse

    Guys, venni patties are the shizz

    Mince it up, add some patty mix(butchers stuff) , pack it into a plastic tube with glad wrap over both ends and freeze, once frozen loosen it up with hot water over plastic tube, then cut up in band saw the thickness you want

    Cold beer, BBQ- you guys know the rest

    His choritzos are great and I am waiting for a run of black puddings too that I have heard are very good.
