HI all
Just joined to see how things are done / hunted across the pond from Manitoba, Canada . you might even have some different tactics then we do , its getting closer to the Rut in our part of the world, usually middle to late November for our deer, at the moment we have Deer Bow season & goose & duck season. no idea what your season is at the moment
Welcome @wlhofer. For me I've got 'if it moves kill it' season, open season on deer, goats, rabbits, hares and possums.

It's early spring here, but we don't have a big game season in NZ, you can hunt all year round.
Gamebirds do have a season, late autumn (May/June).
I had a mate who lived out of Calgary who bow and rifle hunted, I went on one hunt with him but didn't see anything. One day he was out hunting and his wife filmed a moose walking past the house!
WE don't have year round hunting either,
Canada does have a wide verity of game to hunt Polar bear / grizzle Bear / black bear / sheep / Elk / Caribou / Moose / Deer / Mule deer / antelope / wild boar / Wolf / Coyotes / Fox / just to name a few
Guess a bunch of birds too , so no shortage of opportunities if one wants to hunt.

That would be awesome , but would get them extinct pretty quick around here , ya gotta buy tags , only 2 per person at the moment , some areas 3
how much meat would your deer have , Here big Buck close to 100lbs /45kgs , nice doe 50-60lbs / 23-27kgs
I've never hunted Elk , would love to one day , so far i hunt deer
Most elk tags are a draw tag , you have to get drawn to get tag
Red deer, our most common, are between mule deer and elk in size, they crossbreed with elk too. One guy I know recently got a red stag that weighed 156kg gutted.
Fallow deer would be the next most common (and are increasing their range rapidly), they are probably similar in height to whitetail but finer boned and lighter based on the whitetail I saw in Canada.
