A basic but satisfying winter chilli
Basic chilli recipe that doesn't take very long to put together. Can be done with beef, venison, tahr etc
700g red meat of some description, chopped roughly into small cubes (i just pulse it in a food processor)
2 heaped tablespoons tomato paste
1 bottle of beer, preferably something dark
4 large onions
250ml of beef stock
3-4 cloves garlic
1/4 cup of your favourite hot sauce (i used siracha)
1/8 cup white vinegar
1 can kidney beans
Spice blend
1tbsp chilli powder
1/2 tbsp cumin
1 tsp oregano
1tbsp cocoa powder (NOT HOT CHOCOLATE POWDER)
1tsp cinnamon
1/2 tsp clove, ground
1 tsp black pepper
1 tbsp smoked paprika
Salt to taste
Get a pot ripping hot with a good glug of oil in it, add your meat and leave it the fuck alone for 5 minutes until there's a thick brown crust, then stir and continue this until meat is very well browned, drain any excess fat.
In a food processor chuck in the onions, beer, garlic and tomato paste, whiz up into a liquid or as close as you can get it.
Mix spices in a cup or something and chuck them in with the beef, cook for a minute then add liquid and stock and vinegar, top off with water as needed, simmer gently 2 hours or until tender and thickened slightly. Add a drained can of kidney beans in the last hour of cooking.
Top with some grated cheese. Simple but bloody good.
