I used to do similar and use a pair of oversize lopers to slice soft antlers. My wife's Korean so I would dry, vac pac & send to the inlaws
What about one of those hand cranked bean slicers you see in junk shops? I bet that would work just fine

Might still get a cheap cleaver from the asian supermarket, with only one bevelled edge. The only issue is that you end up eating half the batch as you cut it, and nearly all of it if there's beer involved

Tools do work better if you have to cut lots for guests, also looks/are more hygienic by not holding with your hands, knife best if you are alone or sitting in the bush.
