    diy veno salami . pointers please

    I am about to have a go at home made salami . any advise for a first timer

    source some good pork fat, about 20-25%. "Sausage by Design" has some good salami flavourings.

    Buy "Bangers to Bacon" by Jeremy Schmid. He's a Kiwi. Probably have to get it second hand but worth having on the shelf. He has some great recipes if your into making your own sausages, dried or the like. My suggestion is add some pork fat and pork as well as veni is quite lean and the pork gives it a much more enjoyable taste. One of my favourites is Landjager (German dried sausage) which works a treat when hunting from a belt bag.
