Fallow - How Long To Hang In Chiller ?

Have a fallow in the chiller - skin on .

What time frame do others hang similar critturs for - chiller runs at 3-4 degrees.

That should be fine if clean shot.

    A week is fine.

A week is real good. Mate in blenheim who shoots lots swears by hanging it for 5 days with skin on, then skins it and hangs it for another 5, best venison ever. But anything from min of 4 days to 12 and it be great compared to one or two but a fallow is abit smaller to say a red so 4-7 would be fine

I have hung them in the fruit chiller, on the old mans farm, for up to 21 days, skinned, and cleaned, when it didn't have any fruit in it, otherwise, 5-8 days in an old water tank.
surprising how long venison will last, I have hung back quarters in the bush, for several weeks, before going to pick it up, plenty of pepper to keep flies and wasps away. high and dry is the key,

Yep all good 10 days. Got a mate up the south head hangs them in his garage in the winter for weeks on end. He cuts the fat if any away, skins them. They turn a real dark colour and dry out on the out side. I was dogged out when he offered to cook some up, it was dark as, stuck me head in the gut cavity give it a sniff, smelt all good.
He cooked up a mean feed ( other hygiene issues where going on, like wiping his knife on his socks!) tasted pretty good.
Doing farts that would make a dog gag though, not to popular when I got home.
