Thread: Fish cakes......the long version.

    Fish cakes......the long version.

    A good one for any fish you are a bit "over" or doesn't freeze then pan fry well.

    I had some snapper fillets and some spuds.

    Season all this well as you go.

    Some water and milk and Kaffir lime leaves(just because I have them....if not add some lemon or lime or grapefruit rind)
    Poach the fillets till just cooked threw.

    Par boil the spuds and smash a few cloves of garlic in there...

    Put spuds in oven to just brown and dry out a bit before mashing with a knob of butter.

    Really rough mash.... so you know what you are eating.

    Add some lemon/lime juice ,cracked pepper and smoked paprika.
    Dice up a red onion and add.

    Break up the snapper and add.

    I had more fish than mash....dog was happy.

    I didn't have any bread crumbs so toasted 3 bits of bread and whacked them in the kitchen wiz with a 1/4pkt salt and vinegar chips.

    Mix was a little chunky to hold together well so I mixed an egg into it and then pattied up and coated in egg then the crumbs and left to set up.

    Fry in a hot pan with oil and butter and rest in a warm oven till ready to serve.

    Bloody good mate! Honestly it’s hard to beat a good fish cake. Just one of those hearty meals that always hit the spot! & very versatile- can easily adapt to use up various bits & pieces from the fridge. The S&V chips idea is great too!
