Raspberry and White Chocolate Friands
This will make eight friands...you will need 1/2 cup friand tins or use muffin tins or paper cases. Lightly grease the tins.
125g frozen or fresh raspberries
185g butter, melted
6 egg whites, beaten until a floppy texture
100g ground almonds
1/2 cup plain flour
1 1/2 cups icing sugar
100g white chocolate, chopped
weigh out the almonds, flour and icing sugar, sifting well. Add the white chocolate. Stir in the melted butter, then the egg whites, gently folding them into the mixture. Crush half of the raspberries and add to the mixture...I use a small jug to fill the cups...place the rest of the berries equally over the cakes. Cook for 25 to 30 minutes at 180C. Allow to cool and sift over icing sugar...monstrously delicious...

Hehehehehehehehe, they would have all gone by the time I get there:D:D:D They are kind of expensive to make but so revoltingly delicious it is worth every cent. Dougie, the other day I found a twoony in my handbag I used when I went to Canada. Cant believe I didnt spend it on something!!!
