Thread: Kentucky Fried Rabbit (KFR)

    Kentucky Fried Rabbit (KFR)

    This has probably been around the traps but thought I would post anyway.

    KFC Rabbit

    (Time about 35 minutes)


    1 ¾ grown rabbit

    1 heaped table spoon of Salt

    ¼ cup of vinegar

    Milk (enough to cover)



    First get your rabbit. Preferably no lead shot or much bruising.

    Gut, skin and keep cool till you get home.


    Rinse well in fresh water.

    The salt, vinegar and milk process will tenderise and remove most of the rabbit flavour, which I'm not keen on.

    Cut it into pieces. I usually joint them. (6 or 7 pieces)

    Place in bowl or pot and cover with water.

    Add the salt and vinegar, and a bit of a stir to dissolve the salt.

    Soak them in salt & vinegar and water for 4 to 8 hours. (in the refrigerator)

    Drain them and rinse them. Then place back in bowl and cover with milk & leave over night or longer. (in the refrigerator)


    Remove from bowl, rinse and pat dry.

    Spray with cooking oil. (or roll in egg & milk mix)

    Roll in he Tandaco Southern Fried Chicken Spice. (available over here in most supermarkets. Otherwise a good BBQ spice should be OK)

    Place about 1/2 cup cooking oil in a fry pan.

    Heat to about 170c

    Place pieces in oil and cook for about 3 minutes each side.

    They should now be a golden colour.

    Reduce heat and allow to simmer for about 25 minutes with lid on pan.

    Serve and enjoy.

    This looks good and reminds me that it's about time I bagged another Hare, so good to eat but not if you don't like the game.

    Sounds better than the old bunny in a billy over a campfire.... Although I did come up with a decent stew couple months back.
    Shot several bunnies with the 17hmr and decided to cook em up at camp with what I had in the back of the truck.
    Cream, plum jam, oxo cube (beef), chilli flakes, packet of microwave rice (pams Mexican), mixed herbs and some duck fat. I'd make it at home if I could get the family to eat them.

    My grandson and I had one cooked like this a few days ago, he thought it was great. That's because I cooked it. Lol.

    Crumbed rabbit is bloody tasty, I'm also very partial to rabbit in a butter curry

    waste of a hare in my opinion.
    backstraps cooked medium rare with salt and pepper - better than venison.

    The 11 not so secret herbs n spices recipe is on line and easy enough to find. Works well with bits of fawn too. Agree hare is best served quick fried.
