    Lunch today -hot out of smoker

    Just out of smoker ,lunch today probably in white sauce.

    When I have a surplus of Kahawai they get frozen in twin packs for later-on.
    Marinated over night in fridge with
    Lemon juice ,real salt ,raw sugar
    Then hot smoked with 50/50 mix of Pohutakawa /Manuka
    2-2.5 good handfuls to get this nice golden color

    Chris there are kings and queens that don't eat that well
    It takes 43 muscle's to frown and 17 to smile, but only 3 for proper trigger pull.
    What more do we need? If we are above ground and breathing the rest is up to us!
    Rule 1: Treat every firearm as loaded
    Rule 2: Always point firearms in a safe direction
    Rule 3: Load a firearm only when ready to fire
    Rule 4: Identify your target beyond all doubt
    Rule 5: Check your firing zone
    Rule 6: Store firearms and ammunition safely
    Rule 7: Avoid alcohol and drugs when handling firearms

    those fish look yummy chris will have to try the lemon juice thing when I prep my next fish for the smoker I Got no manuka dust for my smoker so the kahawai i caught today is going to be filleted then pan fried for tomorrow nights dinner or it would have been in the smoke box tomorrow morning and made into fish pie tomorrow night.

    Nothing wrong with that chris and that is what I will be having next time I get some more kahawai or trevalley just got to remember to get some sawdust for the smoker out of curiosity where can I get pohutukawa sawdust from are there any shops that sell it I used to have an old oven that I converted to a smoker and used to use pohutukawa wood to run it and stuff green manuka leaves on the embers in the warmer drawer where I used to have the fire to run it wish I still had it as it was a bloody good smoker may have to make another one when I can get hold of another old stove with warmer drawer.

    Tasty any time puku . Bugger all fish pie left ,had sis here for lunch & now she gone home to sort out the other smoked fish I gave her yesterday. (if hubby hasn't found where she stashed it in the fridge)
