    Paua patties

    3 paua rough chopped to get in mincer.
    3 large cloves of garlic rough chopped.
    2 cayenne peppers fine chopped.
    1 red onion chopped.
    2 free range eggs.
    Mustard powder a couple pinches.
    Chilly powder a couple of pinches.
    Fresh cracked pepper lots.
    Salt.... enough for your mum to tell you off.
    Self raising flour 2 or 3 pinches.

    Chop stuff.

    Season generously with cracked pepper and salt and a pinch or two of mustard powder and chilly powder.

    Feed it threw the mincer into the bowl...I put all the garlic onion chilly in first followed by the paua to make sure all the spicy stuff came threw then mixed in bowl.

    Add a couple of light dustings of self raising flour and mix in....piss all maybe a teaspoon.

    Couple eggs quickly beaten and combined.
    Pre heat a oiled pan....add butter then patties.
    Cook on low heat 3-4 min each side.

    Take photo before the last 4 of 8 disappear.

    Shit they were good....worth the 3+hour drive to harvest.

    You got it the chillie powder browns them off fast with out over cooking with out / vulcanising /

    I picked up a few in knee deep water from a secluded beach a while back when down your way, probably 3hr drive from where you live as well.

    did an entrée of a couple sliced in half, lightly bashed, dusted in Indian fish spice mix we picked up from Nelson farmers markets and flash fried in butter. Fresh from ocean to plate in under a hour. The remaining ones I did into a finely chopped, cooked with onions, cream, pepper and served over a rare fillet steak. West Coast version of Surf and Turf.
