    Snapper and Cray Seafood Mornay

    Ingredients.

    2 small onions
    3 sticks celery
    1 carrot
    5 cloves garlic
    1 t ginger paste
    1/3 cup flour
    1 cup white wine
    3 cups milk...hot
    100grm butter
    1 t Old English hot mustard
    1 pinch curry powder
    2 cups grated tasty cheese.
    1 pot of mashed spuds
    1/2 cup fish stock
    450grm crayfish meat
    250grm snapper fillet

    Finely dice all the vege and add to a large pan with the butter and heat threw.
    Add the wine and reduce.

    Sprinkle the flour in and mix in.

    Add the hot milk and mustard and curry powder fish stock and season generously with salt and pepper and mix in well.

    Add in the snapper fillets diced into bite sized bits first then the cray bits.

    then finally add in the cheese.

    Fold in and taste for seasoning and add if required.
    Put in a oven dish to cool then cover with the mashed spud.
    Into a pre heated oven at 180-200c near the top to brown the spuds. 10-15min.

    A few scollys and oysters would go well in there too but I didnt have any.

    Also the fish stock is optional if you have none.
