Thread: Venison patties.

    Venison patties.

    This was enough to make between 6-10 patties depending on how big and thick you like them.

    Ingredients.

    750grm Venison mince.
    2 slices shoulder bacon.
    One large onion.
    4-5 cloves of garlic.
    2 eggs, smallish.
    1 chilli
    Butter.
    3 slices "Toast" bread
    BBQ Sauce or what have you.
    Salt.
    Pepper.

    Dice the onion and garlic very fine and fry in lots of butter untill soft and translucent (the butter is important as venison mince is very lean)
    De-seed and very finely dice chilli and add to the onion and garlic.
    Season with salt and pepper very generously and set aside in a bowl to cool.
    Fry the bacon then dice and add to the onion.
    Put the 3 slices of bread into the kitchen wiz untill all fine crumbs.
    Crack the 2 eggs into a bowl and a quick whisk.
    Add the mince and the bowl of onion/chilli/garlic/bacon and combine, add in a good squirt of bbq sauce and mix in then finally mix in the bread crumb.

    Make into balls and lay out on baking paper with baking paper on top and into the fridge with something flat on top so they all end up the same thickness and nice and flat on both sides for even cooking times.

    In a hour or so they should have firmed up and be ready for cooking, 5-6 min per side depending on thickness, should not be red in the middle but just cooked threw instead.
    Spraying oil on the pattie is better than drowning them in oil on the plate.

    whack in a burger and enjoy.

    They sound and look awesome, im not a fan of the patties that butchers make up in dog roll and slice up. They are always crap, much better making your own like that eh.

    Yea the cheap shit ones the wife gets dont have anything that is recognizable as meat in them and give me really bad heartburn!

    Thats what is in the patties, the extra goes in the burgers with the patties

    I got some made up by the butcher a while back from a young fallow I shot, he did a batch with Cumin seeds in them and they're bloody good! Trouble is I just banged them all in the freezer unmarked so it's a lucky dip to get the cumin seed ones, think I ate 4 burgers one lunch time before I struck gold Haha
