Wild pork sausages
Looking for inspiration for a wild pork and duck sausage recipe, thinking maybe mix in a little tame pork for the fat content and then Fennel seeds.
Anybody got a good recipe to share?
I dont want something too left field, as I will be feeding it to the people that gave me the meat.

we chucked in fennel itself with our last batch of venison sausages...added about 15% pork trimmings with heap of fat on them. do small sample eg about a cupfull size and try it... that way you get taste right before doing big batch.

I've had pork, white wine and apple sausages before. They're pretty good. But didn't get a recipe.
