    Butter knives cut butter

Iíve seen blunter than blunt butter knives in kitchens!

Iíve met several chefs who simply bought a new knife once the old one lost its edge and needed a stone

Equally Iíve met many chefs who could achieve razor sharp, lest I be accused of generalising lol

Ex wife was a chef, I'd get a briefcase full of knives to sharpen by hand.

I don't and I can't find any specifics from Victorinox but from reviews it seems to be between 400 and 600.

    No I don't have unfortunately.

The double sided stones a fat enough to give plenty on knuckle clearance so you can sharpen fine on them just on a towel or bit of wood

I'm keen on one of the 1000/6000 stones, how do I go about buying?
Do you allow pick ups or ship only?
