My take is wooden stocks require the grain to run longways though the grip for strength. With modern plastics, carbon fibre and fibreglass you can have any shape you want.

Ergonomically, designing handles for using middle finger as trigger finger allows a better grip. The thumb-index pinch grip is natural and strong. And the flexor tendons to the middle finger also...

An old guy told me the straight grip who guns were made that way so that when you pulled the front trigger you slid your hand back to position for the rear trigger....well that was his explanation!

I'm not a big fan of a highly curved hand grip, they make my hands feel squashed and a lot of the time like I feel like I have to reach for the trigger. There are many things other than ergonomics...
