   I tried a slightly different method. The first round loaves were meant to be cooked in a Dutch oven and the lid lifted for the last 10-mins. I haven't got a Dutch oven yet so used a casserole dish....

    I use the redneck sink full of water method as my poor man's vacuum packer! I mostly use it when I kill my roosters as without a vac packer it's nearly impossible to get all the air out of the bags...
