   Can depend on where the steak was cut from too. Ie to far down towards the neck and your in chuck or stewing territory. Could be high ph or old animal. As for aging it can be done after freezing....

    Out of my small experience there is a big difference in case capacity my staline brass is a compressed load at 25grn of 2206h but adi you can fit 27 grn of 2206h
