Biography:
Grew up in a place called Te Whetu which is a town that no longer exists. The hills are getting steeper but I can still get up them. Until six years ago I farmed red deer and was fortunate enough to have fallow over my back fenceline. I mostly hunted down the back of Minginui where the deer had a better chance of getting away with their skin intact.

    If you can wait the time and are brave enough to let the meat go black on the outside then the enzymes that break down the structure of the meat (which is what I believe ageing is about) will have...

    Even though I farmed red deer and I like to eat it, my answer is Fallow by a country mile. As 7mmsaum says it is finer grained and more tender.

    I have never experienced a problem with mine either Dawg. I am happy to just wait for the next move by Remington and use it in the men time if it is the right choice rifle for the day.

    As I recall the evening course that I attended all those years ago was very similar and the single instructor helped people pass their multiple choice test. There may be a business opportunity there.
