I tried this again a little while ago, i found that sambal (thai ground chili paste) works far better than a fresh chili.
Make small incisions into the meat about 1/2 an inch deep and put garlic and rosemary in these incisions.
Yep, that's the idea. It's a very subtle smoke that doesn't impart much flavour but it compliments the sweetness.
