What's your seating depth? The manufacturers may have deliberately cut the throat a bit shorter to make sure the factory loads were just touching the lands (boosting the chamber pressure).

An average bullet is decelerating with a frontal force of 40G's so anything not in line (like a skew tip) is going to go pretty squirrely

At 300m you do start to see minor wind effect the groups. Have a look at 'Applied Ballistics' and deliberately dial in a 10m/sec crosswind.

I'd swap out your ammo for something really different (say you had Hornady VLD's boat tails there in your test, try a flat base hunting bullet).

I used to buy hornady ftx or monoplex from either Delta Mike's or Reloaders Supplies.
Up close at 26m the 45-70 can group like a .22lr and they're both prone to being pushed about by the wind out past 100m. But that's half the fun I reckon

Dont be afraid to load heavier projectiles and drop back the powder. You can easily push a powdercoated 300gn cast projectile to 2000ft/s but seriously.. zero reason to imo.

I reckon you'd be right on that. H335 is similar to CFE223 and winchester 748. The Lyman max load there is 45.7gn giving 2714ft/s. Worked up (safely of course) I reckon you'd hit 2800
Carefull when you load those up as well. I had a modest uncompressed load and they have heavy bolt lift and had flattened primers. Tbf I won't bother with ex-mil 7.62 brass in future.
What temp you run your mix at? I'm finding 450deg c to be about perfect for filling out the mould. Especially if I only do a 3 second hold then drop them out
