Don't think of eating them. I shot a few wild chickens for New Year's dinner some years ago. They were full of sinews, a bit like a pukeko. Cooked and tried to eat them but it was like eating wood. I did not have a pressure cooker at that time - might have been the answer.
They do however make terrific stock to use as a base for something else!
