Home killing or taking a deer you shot to be processed is no longer a 'cheap' option. Last year we bought in a homekill outfit to do two cattlebeasts. The price had gone up markedly since we last used them (we have processed them ourselves the last couple of times), and all up the meat (beef) averaged out at $17/kg. Lost opportunity cost of the steers, onsite kill cost, processing costs/kg, additional cost to make sausages etc.
We hardly buy supermarket meat, but do keep our eye out for those 'failed export order' of lamb legs @ $8/kg, and pork if we want to spoil ourselves. I deboned one of those lamb legs and minced it all. Worked out at $10/kg.
