I’m not sure wetting the bag is a good idea, lots of microbes in water. The meat is damp enough to assist cooling.
Youd think so, but I know people that dunk whole legs etc in rivers and still don't get sick. I drink out of the same rivers and streams and no issues so far. The damp cases dry any way with a bit of wind, I believe it just accelerates the initial cooling process.
