I guess we all take similar stuff, but here's mine.

Pack,
sleeping bag,
Tent and sleeping mat (if camping)
Warm Jacket,
One pair thermals,
Two fleece,
Two pair socks,
One shorts,
Long sleeved shirt,
Long pants,
Sun Hat,
Warm hat.
Cooker + gas,
Knife and spoon,
Small pot,
S/S Mug (also used for cooking)
Continental Pasta type meals, (cheaper and taste better than Back country)
Porridge,
muesli bars,

Raro drink (good source of energy),
Water bottle (1.5 litre for tops hunting),
