Worst case is it might be seized, and you should be able to retrospectively apply for an import permit as a collector.

Assisted openers seem to be a tad inconsistent; I had to import permit mine, yet others here have reported no issues

Note assisted opener knife, as distinct from a flick, or automatic opener type knife; you’ll get grief over them full stop imho.

Think about your travel home and which borders you’re crossing; might be simpler to post to yourself and deal with NZ customs that way when you get home?
