I just used to use the finest wet and dry sandpaper I could find. That way you cant really mess it up. Just used to roll the sandpaper up in the palm of my hand and rub the steel up and down through it.... Just do it without much "grip" and you can't really go wrong
At the works, we used a bit of scotchbrite. All told, we probably rubbed them for countless hours.
