Dont stab your knife in the soil whilst you are gutting a deer. Clean the blood off the knife with a rag and keep water off it. Water can take the edge off a knife pdq.
I only ever use a whetstone and steel, is it worth getting a sharpener? I'll use water and a rag because the less risk of contamination the better, can always hone with steel after if needed (yes i'll probably bring a steel into the bush)

Picked up a small honey badger folder a while back and to be honest it's all i use know. Small, simple and easy to sharpen.

Ive just started using one of these short Victory Boning knives, just because I was looking for something more compact and lightweight compared to my regular size boning knives.
I love a real pointy knife, makes sticking the throat easy and also does a tidier job removing the bumhole intact.
This wee knife also seems to be finding its way into the kitchen regularly

Tried Kershaw, Puma, and couple i can't remember the name. Now #8 Epinel, it's grouse for the money. Perhaps the best.

I need a decent boning knife.

Victorinox or victory or dexter Russell.

    Which is best?
    What size?

To the OP, Your Buck folding knife will have good steel - you could get the kinks fixed very cheaply.

I’d say victory is the widely used one. It’ll hold its edge and is very easy to sharpen. All meatworks I’ve been in use them.

Where could I find a place that’ll fix it?

I have both Victory and Victorinox, I prefer the edge geometry of the Victory knives, they just seem to slice better.
Both steels seem to hold an edge similar and are easy to sharpen, good ergonomic handles.
At home, I use 12-13cm curved boning and skinning knives, in the field i use a 10cm curved boning knife

Most anything in S30v from a reputable brand will do you well for years and years. It is a pretty forgiving steel.

I have used a muela skinner and a bush knife from @Shelley for the last 6 years and haven't thought I needed to upgrade.
