In reference to the last 5 posts, this is why I carry a pair of knives - one for skinning and one for boning. Keep your skinning knife for ........ skinning, ...... and dealing to any joints. This keeps your boning knife in top condition for taking out the key muscle groups.
Yeah I carry a wee havalon as a skinning cuts/backup knife, although any properly treated steel from D2 on up should deal to both no problem. If you don't use your knife like a pry bar you an run them a bit harder as well which always helps.
