Cooking it whole is the most traditional way and makes for a fun time while waiting.

Cochon de Lait is the local term.

But roasting or barbecuing allows for making sausage, boudin (sausage casing stuffed with meat, rice and seasoning)
poboys (sandwich), bacon, stew with gravy and vegetables, meatballs, tacos... pretty much any dish.

Forgot hogshead cheese on crackers (not cheese in any way) and cracklins (fried pork skin).
