Crumbed Fish for tea

Try this

Dry your fish fillets and put on plate.
Season liberally with salt, black pepper.
Zest a lemon over the fillets.
finely cut up a small piece of ginger and add to the fish. Mix the fish around and leave for 10 minutes.
Throw all the fillets in a bag with some plain flour and shake.
Mix a couple of eggs and coat all the fillets with egg and then fine bread crumbs.
Let stand in fridge for a bit then oven bake in a hot oven.

Serve with wedge of lemon
I prefer it cooked in the oven rather than deep fried.

We had this tonight for tea and the vegetable component of dinner was tomato sauce!!! BUT you could also use sweet chilli sauce :)

Got any tips for crumbing without ending up with sausage fingers of crumbs?

Yep i put my flour in one Tasman Rate Payers Bag and breadcrumbs in another one (you can get them at the entrance to any park in Tasman where dogs are allowed (a.k.a dog shit bags.)

Fish into the flour and shake bag, out into egg using fork then into the other bag full of crumbs and shake bag and out with the fork onto plate. then repeat.

When you are done tie knows in both bags and into rubbish.

Pretty much how we do Weiner schnitzel and pan fry

Try Panco instead of bread they go golden Brown I dip in seasoned egg then in Panco and shallow fry yummmm

The last batch of Gurnard that I cooked up, I dipped briefly in milk, then coated using Coat n Cook with a dash of peri peri seasoning. Works for me.

What is also pretty good is substitute salt and vinegar chips for the breadcrumbs dont crush down too much.

i just had crumbed hapuka fried in butter for dinner it was horrible you guys wouldn,t like it:P:pacman: so i better eat the rest

Yeah @veitnamcam. Had some like that as an entree but the two of us are travelling and we have to somehow eat half of that fish tonight (have a friend here in Queenstown that is getting the other half). We have given it a bloody good crack.

Best breadcrumbs... Cheds crackers, Parmesan cheese, in the blender... Farkin yum.. For fish or snitzel....
