    Duck Burgers

    Looking back through some old photos today from the last time I was living and hunting in the Naki and came across a few of duck burgers that I use to make up.

    Step One - Find a Pond

    Step Two - Hopefully shoot a few ducks - breast them

    Step Thee - Mince the duck breast adding streaky bacon for a bit of fat content

    Step Four - Mix together with herbs, beaten egg, red current jelly, add a bit of chopped watercress and bread crumbs if you like
    Step Five cook to medium rare, rest and serve and enjoy.

    Dayummm why didn't I think of that......first duck meal once I'm over covid....cannot taste a damn thing currently

    Looks like a nice recipe for Paraies as there a bugger to pluck!
    But for those that want to use the full bird try this.

    I just hang it on a hook in the garage while doing the basting. If it’s warm you might want to use a fridge. Stop them from going off and keep the flies off. But comes up a treat the meat just falls off and you use the whole bird.

    Having just learnt how to cook duck breasts properly, I'll stick with that as they end up like nice steaks, but the burgers look great. Worth a go with parries as Sideshow suggests. Would be interested to hear how it goes if someone does it before me.

    I like a good crispy skin on duck breast as well, or a slow roasted whole duck in an oven bag.

    These are a good option to have in the book for when you are sick of plucking ducks and roasting them or doing duck breasts, can also make these up into "Duck Nuggets" to feed to the kids, mince, small patties, egg wash crumb and fry. If the kids dont like the "gamey" taste soak the breast in butter milk or milk over night before mincing.

    Plenty of ways to cook up the wild duck, I like to give different things a try and see what works for me. Next on the list is butter milk southern deep fried duck, just need to get a duck...

    Yep those oven bags are dam good no more dry roast duck They keep the juices in!
