Try cooking in coarse salt, I did some pork belly on in the Webber, put down a thick layer of salt on cast iron plate, put pork on top, skin up, cover completely with another thick layer of coarse salt and bake, I had a thermometer in mine and work on temp for cooking. Wipe off all the salt a enjoy. The crackling is wow. Also cooked some tiger prawns this way, really nice!
