    Smoked Rabbit Croquettas

    I recon rabbits really underrated.

    Mostly goes to dog food as the boys gotta eat but decided to do some work with a few cottontails i got my hands on.
    Thought id share it with you nice guys and gals, gunna be a great add on at a barbie.

    first its a dry rub on the meat, salt pepper, paprika and chilli will do.
    then smoked in the smoker for around 2 hours cause it wasn't a lot of meat. (i was cooking a chilli at the same time so banged the pan for that in the smoker too, it keeps humidity up to stop the rabbit drying out too much and adds that good smokey flavour to your chilli.

    Rabbit out.
    Mix with a decent mash potato, i add butter garlic wee bit of fine onion, shred your rabbit up and roll it all together into cylinders.
    roll through a good egg wash provided by the chucks. Drop in bread crumbs and fry till golden.

    Spot on. Makes eating rabbit a little more exciting anyway.

    I assume hot as you shredded it? Seems a lot of cooking?
