Best duck I had was when my Dad had the butcher shop and he corned a few mallard breasts ...... Awesome in boil ups or just as mini corned cuts...

I've become a fan of Duck burgers ,like others still ducks in the freezer.Talking to a guy at the club who suggested getting some made into salami or
hamburger patties. So dragged a couple out of freezer ,mince then made into patties.Just a bit of diced onion & flour to bind together .
Was a bit worried about them but the turned into some seriously good burgers for my lunches.Added a bit of plum chutney & home made mayo & usual trimmings.
They're every bit as good as venison patties & a great way to use up a few ducks in the freezer
