    Another option is to get the butcher to pump it into silversides, perfect winter warmer with some mustard sauce, mash & peas and doesn't cost too much.

    Corned venison is bloody beautiful...

    Back in the the day we used to get tahr legs done up like a mutton hams.. absolute nectar

    Cured is who I use
    They do "lots"
    Minimum lot is 10kg of your meat per flavour
    Got a couple of lots of salami bushman and spices Hungarian bangers.
    Now do bangers and biersticks.
    You loose a little more in bierstick but more versatile
    Garlic and pepperoni are the preferences here for bierstick

    If you want to do corned venison yourself, I have a very good recipe.

    Hey how are the pies do they taste good mainly just the venison ones?
